Q&A WITH Joshua Fitzroy

1. What Inspired you to enrol at Jackie Cameron School of Food & Wine

I intend on becoming a Chef, and this school is the best way to fulfil this desire.

2. What are you hoping to achieve here?

I simply want to cook a soufflé; the rest will become my life as I develop in the process.

3. Explain what you are prepared to give of yourself.

Everything. Aiming to the top of a field means I am already all-in, I prefer living an entirely committed and engaged lifestyle.

4. What is your long-term goal?

Having a first person view of the life my Chef career becomes.

5. In how many years do you hope to achieve this?

Immediately. And it will develop progressively as time passes.

6. Are you aware that the pressure you'll be placed under during the course will help you to achieve your goal? Elaborate on your ability to cope with pressure.

Stress is constructive if given the right direction, I use pressure and stress to focus on my abilities and commit my actions to memory.

7. Do you shy away from hard work? Elaborate on your answer. 

I absolutely do not shy away from the work. I am constantly working toward easier ways of achieving ever simpler goals so, in this respect, I will shy away from unnecessary and time-consuming work which delays the priorities I am committed to. Ultimately, I value discernment as the principal work in my practices.

8. Are you willing to perform all tasks assigned to you? Give a reason for your answer.

Absent of task description I am unwilling to perform the task. Based on trust and necessity, I am willing to engage fully with every task, no matter how tedious.

9. Are you aware that the hospitality industry requires you to work on weekends and public holidays while guests ‘play’? Comment on this.

Yes, this is the best way to live. I am excited for the rest.

10. Who is your favourite international foodie?

The large man from Australia’s MasterChef, Matt Preston.

11. If food had a personality what dish would be most like you - and why?

Sweet chili chicken. It’s delicious - sweet and dependable.

12. Where were you born and raised?

In Zimbabwe until 2006, then South Africa.

13. Apart from food, what hobbies do you enjoy?

Yoga.

14. What dish do you find least inspiring? Explain your reason. 

Peanut butter sandwich, because there are infinitely more inspiring dishes available to the layman.

15. Name four celebrities you'd like to have at your dinner table. Explain why. 

Ice Cube, Jennifer Lawrence, Dwayne ‘The Rock’ Johnson, and Adam Sandler. The chemistry between these actors would pose an interesting evening of conversation. All of these celebrities are characters that have magnificently crafted their own careers with a depth of artistry.
