Megan’s Dad’s pork toasted sandwiches
Homemade bread (Makes: 24 slices)
Ingredients:
2 cups warm water
½ cup white sugar
1 ½ tablespoons active dry yeast
1 ½ teaspoons Oryx salt
¼ cup Sunfoil Platinum oil
6 cups Champagne Valley flour (you can use all purpose flour or bread flour)
Method:
In a large bowl, dissolve the sugar in warm water, then stir in the yeast. Allow to proof until yeast resembles a creamy foam, about 5 minutes.
Mix salt and oil into the yeast mixture. Mix this into the flour one cup at a time.
Knead the dough for 7 minutes.
Place dough into a bowl and cover with a damp cloth. Allow to rise until double in size (about 1 hour)
Knead dough for 1 minute and divide in half. Shape into loaves and place into bread tins. Allow to rise for about 30 minutes.
Bake at 175° C for 30-40 minutes or until baked.
Sandwich filling (Makes 4)
Ingredients:
540g pork sausage
Oil for frying
Butter for spreading
Your favourite peri peri sauce
10g lettuce, a few lettuce leaves
50g Cheddar Cheese
8 pieces of homemade bread
Method:
Squeeze the insides of the pork sausage out and shape into 135g patties.
Fry in oil until well cooked.
Butter the bread on both sides and toast it in a pan.
Once toasted, assemble by adding your favourite peri peri sauce, the burger pattie, lettuce, and cheese.
Serve and enjoy.
