A mission over a mistake leads to victory

This heart-warming story comes from Jessica George, a current student.

“When I started here at Jackie Cameron School of Food & Wine, I had no intention of ever entering any food competitions,” she shared with us – after the event. This, however, was until entering a food competition was “the only choice I had”.

Jessica stored vanilla pods incorrectly, and they were ruined – unusable. These were not ordinary vanilla pods. They were an imported variety – and came at a price.

Unbeknownst to me - in desperation, and to make up for her mistake, Jessica entered the “Add an Avo to an On-Trend Meal” student chefs’ competition. She hoped to be placed within the Top 3 because the prizes had a monetary value and she wanted to replace the pods she had ‘destroyed’.

Jessica said she knew she had to make something exceptional and it was her avocado macarons that won her the place she so badly desired.

“I was a desperate student on a mission to gain redemption,” she admitted.

And that she did – 100 per cent. After the sacrifices Jessica had made to ‘right her wrong’, I told her to treat herself with the hard-earned winnings.

I wonder if she’ll ever come up with a recipe containing vanilla pods – after all they led her to victory!
