This Friday’s selection brings together two areas of baking that ask students to pay close attention to method. A good biscuit depends on accurate weighing, careful mixing, consistent shaping and controlled baking. A well-made cake adds structure, crumb, filling, icing and finish to the lesson.

Depending on the week’s practical work, the table could include familiar favourites and student interpretations such as:

  • Shortbread
  • Jam biscuits
  • Oat crunchies
  • Rusks
  • Loaf cakes
  • Cupcakes
  • Layer cakes

These are examples of the kinds of products students may make during practical training, rather than a guaranteed menu. The final selection will reflect what has been taught and prepared in the kitchen that week.

Made as part of practical learning

The Roadside Cafe is not a conventional bakery with the same display every week. It is a Student Popup—an opportunity for students to take the methods they are learning and turn them into food they can share with the local community.

In a biscuits-and-cakes practical, that can mean learning how ingredient temperature affects texture, how mixing develops structure, how to portion consistently, how to judge a bake, and how to finish an item neatly without losing its handmade character.

It also gives students experience of the rhythm behind production: planning, preparing, baking, cooling, filling, icing and presenting their work within a real timeframe.
