Umtentweni, on the South Coast, was Jade’s home until the family moved to Durban when she was 11 years old.  Jade comes across as softly spoken but I am no longer fooled by her demure manner because when the students are taking a break together, it’s generally her voice and laughter that I hear.

A past pupil of Durban Girls’ College, Jade Busse took no gap year and enrolled at Jackie Cameron School of Food & Wine. “Being here for the last few months has been the best decision and experience that I have ever had,” she says, her eyes twinkling with excitement. “I have learnt so much that I have to pinch myself every time I think about how much we have covered since we arrived.  It has been challenging in many ways and I have had to push myself out of my comfort zone, but I have grown mentally and physically. I keep learning so much every single day.”

Jade admits to waking up, excited to see what is in store for her because each day is different and has her eager to learn – and learn more.

“Since being here I have had so many amazing experiences from ‘sundowners’ which happen once a month, to the drive-in movie nights, and to working in Br.unch, the school’s restaurant. I am excited for what the rest of the year holds. I enjoy every minute of every day and am so grateful to be learning with Chef Jackie.”

Before enrolling at our school, Jade had her own successful business, Jadey Bakes, and she created the most delicious, eye-catching, special-occasion cakes for family and friends. The culinary course here includes costing, so I am sorry to inform Jade’s ‘clients’ that her prices may increase now that she understands the theory involved in pricing. And you, the reader, are fortunate to be the recipient of one of Jade’s irresistible recipes.

“When asked to share a recipe with you, my decadent chocolate cake with rich, mousse chocolate icing popped into my mind. I am a passionate baker and I enjoy testing many different recipes. This is by far our family favourite. My dad is a chocolate-cake ‘addict’, so I baked it for one of his birthdays - and a tradition was born. People rave about it – and I hope The Witness readers will too. It is a moist, delectable and versatile cake. I have baked it for many occasions, such as birthdays and anniversaries - or even to share with friends as we indulge in its deliciousness. It is easy to put together, and as easy to dress up or down. It can be decorated with loads of colourful flowers, a variety of chocolate treats or a simple sprinkling of Flake and glitter.”
