Christopher’s Honey recipe: Honey Muffins
Yields: 6
Ingredients:
120g Champagne Valley cake flour
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
1 Egg, (Midlands eggs)
¼ salted butter (melted)
60ml butter milk
26g Sugar
63g Honey
5ml vanilla extract
Orange zest –(optional)
Method:
Mix the flour, baking powder, baking soda, salt together and mix well.
In a separate bowl mix together eggs, salted butter (melted), buttermilk, sugar, honey, vanilla extract and mix until combined. Fold in the dry ingredients with the wet ingredients with a spatula until combined. Turn oven on to 191°C
Spray and cook muffin tray. Bake muffins at 190°C at 25-30 minutes
