Michael Chiazzari’s Banana Blondies
YIELDS 9 Large Blondies
INGREDIENTS
- 140g Butter 
- 400g Muscovado sugar 
- 3 Large eggs 
- 5ml Vanilla Essence 
- 150g Champagne Valley Cake Flour 
- 150g Villa Doré Green Banana Flour 
- 5ml Baking Powder 
- 2ml Oryx Salt 
- 160g White Chocolate (2 normal sized slabs) 
- 100g Nuts (Any variety will do) 
- 1 sheet of grease proof baking paper (To line the tray) 
METHOD
- Melt butter in a saucepan and add sugar and mix well. 
- Take off heat and let cool for 3 minutes. 
- Stir in eggs one at a time and add the vanilla, mix until well combined. 
- Sift in the flours, Baking powder and salt, mix well, ensuring that all the flour is incorporated. 
- Spoon into a lined baking tray and smooth the top. 
- Push chunks of white chocolate into the mixture so it does not burn while in the oven. 
- Sprinkle the nuts over the top and bake at 180ºC for 30 minutes.
