A Family-Inspired Fried Rice Recipe with Student Chef Flair

Yields: 4 Portions

Ingredients

  • 1 cup of white rice

  • 5ml oil, sunflower

  • 135g sliced onion

  • 93g of yellow pepper

  • 79g of red pepper

  • 109g of carrots

  • Two cloves of garlic

  • 185g of mushrooms

  • 118g green beans

  • 130g of smoked pork sausage

  • 117g of bacon

  • 1 teaspoon of Durban masala

  • 1 teaspoon of paprika

  • 1 teaspoon of turmeric

  • 1 teaspoon of Oryx salt and pepper

METHOD

  1. First, rinse the rice with cold water until the water runs clear.

  2. Cook the rice on the stove for 15 to 20 minutes until it is cooked.

  3. Strain the rice and leave it on the side to cool so that it does not overcook.

  4. Chop all your vegetables and meat into your preferred shapes and sizes.

  5. Heat up a pan on low heat. Add a teaspoon of oil and allow it to heat slightly. Add the onions, peppers, carrots and garlic. Mix everything together and cook until slightly softened.

  6. Then add the mushrooms, green beans, sausage and bacon and mix well.

  7. Combine all your spices and add them to the mixed vegetables. When the vegetables are bright in colour and cooked, set them aside.

  8. In another pan, switch on the stove and add your rice.

  9. Add the cooked vegetables and mix everything together.

  10. Taste and adjust the spices or salt if needed.
