Holly King's Chocolate Cake Recipe
Makes a 35cm x 25cm beer box
CAKE INGREDIENTS
350g Champagne Valley Flour
24g Cocoa Powder
5g Bicarbonate Soda
230g Castor Sugar
5g Baking Powder
Pinch of Oryx Salt
1 Midland’s Egg
15g Brown Vinegar
500mls Full Cream Milk
150g Melted Salted Butter
METHOD
Mix the Champagne Valley flour, cocoa powder, bicarbonate soda, castor sugar, baking powder, and Oryx salt together in a bowl
In a separate bowl, mix the Midland’s egg, vinegar, milk and melted butter together
Pour the wet ingredients into the dry ingredients and mix together – making sure that is combined and smooth
Place the mixture into a 35cm x 25cm tray and bake in a DEFY oven at 180 for 18-25 minutes.
ICING INGREDIENTS
100g Dark Baking Chocolate
100mls Hot Coffee Mixture
15g Melted Butter
15g Cocoa Powder
1/3 of a cup of Icing Sugar
METHOD
Break up the chocolate in a microwave safe bowl and pour the hot coffee mixture over the chocolate – microwave for 30 seconds or until melted and let cool
Place the melted butter into a bowl and add the cocoa powder. Slowly start adding the icing sugar, a tablespoon at a time, until the mixture resembles crumbs
Pour the melted chocolate into the icing sugar mixture and whisk until smooth. If the icing is too thick you can add more of the hot coffee mixture to it until you are happy with the consistency.
Pour the icing over the cake and decorate

“I chose this recipe because some of my best memories growing up are of my mom and me baking chocolate cakes for birthdays, special occasions, and Saturday afternoon teas. Growing up, I loved baking with my mom, who is my best friend and role model. She’s part of the reason I knew that this is what I wanted to do professionally, and why I’m so hungry (no pun intended!) to begin this journey!” - Holly King
