“Having a good foundation is always important, especially in this industry. The small things matter. Chef Jackie makes sure, from day one, that you not only learn about food but more importantly the “small” important things. Your mind-set, your attitude, attention to details, and how to “think with your Chef hat on.” I think its important that you are prepared for what this industry expects of you. It is difficult. But being prepared makes it a challenge you want to take.

What you learn is relevant and you're constantly kept up to date with what is new, so when you arrive in kitchens you are properly prepared. Chef Jackie really lives up to that. I'm grateful to have had her guidance these last 4 years and I find comfort in knowing that she is always a message away, even when I'm no longer a student. She saw potential in me that I didn't yet see, and pushed me to fulfill it. I'm truly thankful.”
