Langelihle Mnikathi's Midlands Chicken Wrap Recipe

Yields: 2 Servings (2 Wraps)

INGREDIENTS

  • 2 Leg quarter of “Midlands Chickens”

  • Oryx Salt and Pepper

  • 30 g Sunflower Oil

  • 2 Flour Tortilla Wraps

  • 6 Lettuce Leaves

  • 2 Tomatoes (Sliced)

  • 1 tsp of Home-made Mayonnaise

  • 120 g Gourmet Greek Cheddar Cheese (Grated)

METHOD

  1. Prep: Sprinkle your Oryx salt and pepper evenly over both sides of your leg quarter chickens. Then pour sunflower oil all over the chicken.

  2. Bake the leg quarter chicken in your Defy Oven at 180°C for 15 minutes per side or until cooked properly. Let the chicken rest for a few minutes before shredding the chicken.

  3. Lay the wrap down flat on your serving plate.

  4. Then lay 3 lettuce leaves, sliced tomatoes, the shredded chicken in the center of the wraps.

  5. Add the homemade mayonnaise and cheese

  6. Fold up: Fold the bottom half of the wrap then fold the sides

  7. Serve: Slice in half. Serve immediately.


Story behind the dish:

“I chose this meal because it is the go-to meal for all the kids in my family. The elders of the family, however, prefer traditional food. I come from a big family - my grandmother had nine children. I have more than 10 cousins. I am very close to my cousins, and we were all raised by my grandmother at about the same time. This meal holds precious memories for me because it reminds me of my cousins and all the gossip we shared while eating wraps. Whenever we are together, we always make wraps quickly and then we sit in the lounge and watch TV or play cards. It’s how we connect.” - Langelihle Mnikathi
