Luca Heath's Midlands Mushroom and Steak Recipe
Yields: 2 servings
INGREDIENTS FOR CHICKEN
15ml Olive Oil
1 Onion, finely chopped
2 Garlic Cloves
15ml Meat Masala
10ml Curry Powder*
3 Bay Leaves
1 Tsp White sugar
3 Tomatoes, chopped in equal chunks
565g Chicken Hearts
2 cups Beef Stock
Thyme
Coriander
METHOD
In a pot, start off by heating the olive oil.
Add the finely chopped onion and garlic, then fry.
Proceed to add the meat masala spice, curry powder, and bay leaves and stir together until you can smell the aroma.
Continue to then add sugar, chopped tomatoes, chicken hearts and stir all together for a few minutes.
Finish off with the beef stock and leave to cook on medium heat until consistency of the mixture has thickened .
Add thyme and leave to simmer for 5 minutes.
Garnish with coriander and serve.
Adjust seasoning with Oryx salt and Oryx black pepper. Feel free to add sweet chilli sauce for more flavour.
INGREDIENTS FOR PHUTHU
1 and a half cups Water
Half a Tsp Oryx Salt
2 - 3 cups Maize Meal
METHOD
Bring water to the boil and add Oryx salt.
Reduce heat to low, add in your maize meal and leave to set for 10 seconds.
Proceed to mix with a fork and cover pot for 20 minutes onlow to medium heat.
Open pot, and now use the fork to fluff it out with stove onlow heat.
Open pot and now use the fork to fluff it out with the heat on low.
Dish up and serve.
Make sure your Phuthu is soft and fluffy. Also best served with Amasi!
