Two Recipes Perfected

When I reflect on my more than 11-year relationship with The Witness readership, I consider it time — perhaps over time — to thank all concerned for your continual support and your enthusiasm. I keep thinking how time flies.

It took awhile for me to process that my first article for The Witness was written in 2008. And then I was reminded that January 2020 will see the fifth intake at Jackie Cameron School of Food & Wine. Looking back, I was working on opening a school, in 2014; and I travelled to Saudi Arabia for what I believe to be the first female cooking event.

In 2015 my school opened; I was a judge at the Eat Out Restaurant Awards, the Oscars of the country’s culinary industry; and I was a Galliova judge. What a whirlwind of events. In 2016 my first intake of students graduated to take their place in the industry and I celebrated my second cookbook Baking with Jackie Cameron’s international award.

With the 2017 students I launched our pop-up restaurant, which has been very well supported; and with the 2018 intake I launched our school shop and daytime restaurant — another successful venture. In 2019 we introduced a three-year course, as well as the 18-month course. I was also privileged to win the top educator award at the WOMXN XXX Food Awards that celebrated women in the business of food.

What will 2020 hold? I am excited and I look forward to meeting more of our next intake, over the following few weeks. Anyone interested in a culinary career should book an interview soon — we enrol a maximum of 15 students each year.

Today I’m sharing two recipes that I think we perfected this year: Yorkshire pudding and a Chocolate Macaron. I’m keeping words to a minimum, leaving space for the two recipes because each one is world-class in its own right. I’m confident your family and your friends will thank you.
