It’s appropriate that Olivia Malan should be my first student introduction of the year because she was the first person to enrol for the 2022 intake. As disruptive as Covid-19 proved to be, there were a few lessons learnt and, for me, the message was the accessibility of an online presence.

Olivia came to us from Botswana, so her interview was conducted over the Zoom platform, and I realised how easy that was. 

Olivia has chosen to share her milk tart recipe. Fortunately, she made a double batch for the photographic shoot, so we all got a healthy portion of this scrumptious fare. At Jackie Cameron School of Food & Wine, we are cautiously generous with our portions because one of our golden rules is ‘no waste’.

Milk Tart Recipe

Family is important to Olivia, who believes that we are the ones responsible for taking our traditions into the future. “This milk tart recipe is very dear to me,” she says. “It may be simple to follow but it is a method that the whole family can enjoy. Cooking and baking have always been a passion of mine so, when I was offered the chance to share a dish that was close to my heart, I could think of nothing but milk tart. It is the embodiment of family traditions and through every generation it has remained constant and is still as good as it ever was.”

Olivia believes that food brings people together and, in the process, memories are made.

I’m not sure about her tip for the home cook because I haven’t tried it, but she says she has the proof in the applause! Olivia uses cheese curls for her macaroni, and cheese to make it cheesier. It would be interesting to know how well this works for you

When asked the personality type best suited for the culinary industry her response was, “creative and adventurous”.
