“Non-starchy vegetables are best (spinach, kale, broccoli, cauliflower); so I thought a broccoli pesto would be a tasty alternative to the norm. It includes low-fat cream cheese, and sunflower seeds that give an interesting depth of flavour without the richness and oiliness of pine kernels that are generally used in pesto. Anticipate a healthy bite of broccoli bliss!”
Diabetic Broccoli Pesto Recipe
Yield : 350ml
Ingredients:
250g fresh broccoli
1 clove garlic
1 Tablespoon lemon juice
100g low-fat cream cheese
½ cup firmly packed fresh basil leaves
2 Tablespoons lightly toasted sunflower seeds
1 teaspoon olive oil
Method:
Blanch broccoli until just-cooked.
Rinse under cold water. Drain well.
Blend the broccoli with the rest of the ingredients until paste consistency.
Serve as one would a basil or sun-dried tomato pesto.
