Michael Chiazzari’s Banana Blondies

YIELDS 9 Large Blondies

INGREDIENTS

  • 140g Butter

  • 400g Muscovado sugar

  • 3 Large eggs

  • 5ml Vanilla Essence

  • 150g Champagne Valley Cake Flour

  • 150g Villa Doré Green Banana Flour

  • 5ml Baking Powder

  • 2ml Oryx Salt

  • 160g White Chocolate (2 normal sized slabs)

  • 100g Nuts (Any variety will do)

  • 1 sheet of grease proof baking paper (To line the tray)

METHOD

  1. Melt butter in a saucepan and add sugar and mix well.

  2. Take off heat and let cool for 3 minutes.

  3. Stir in eggs one at a time and add the vanilla, mix until well combined.

  4. Sift in the flours, Baking powder and salt, mix well, ensuring that all the flour is incorporated.

  5. Spoon into a lined baking tray and smooth the top.

  6. Push chunks of white chocolate into the mixture so it does not burn while in the oven.

  7. Sprinkle the nuts over the top and bake at 180ºC for 30 minutes.
