Maganizo’s Bacon Mac & Cheese Recipe

He says Mike enjoys macaroni, in any shape or form but, particularly, with bacon, mushrooms and loads of cheese. Try it – you’ll agree that it’s packed with deliciousness.

Maganizo’s Macaroni with Bacon, mushrooms and extra cheese

Ingredients:

  • 1 cup macaroni

  • 50 mls unsalted butter, start with 10 mls then 40 mls

  • 100g onion

  • 1/2 cup sliced mushrooms

  • 5 slices bacon

  • 1 cup full cream milk

  • 100g onion, chopped

  • 2 bay leaves

  • 5 black peppercorns

  • 1 spring Thyme, fresh

  • 40 mls Champagne Valley stoneground flour

  • 1/4 cup grated cheddar cheese

  • 2 tablespoons grated parmesan cheese

  • 10 grams parsley, fresh

Method:

  1. Prepare and cook macaroni as per the packet instructions.

  2.  Melt 10 mls of butter in a saucepan and fry chopped onion, mushrooms and bacon, combine the mushrooms mixture with the cooked macaroni.

  3. For the white sauce: boil the 1 cup of milk together with 100g chopped onion, 2 bay leaves, 5 black peppercorns, 1 sprig thyme

  4. Melt the 40 ml butter into another saucepan, add in the flour and stir until well cooked, strain the boiled milk and add into the flour and butter mixture stirring occasionally until cooked and the right consistency has been achieved, season well. Then add in half of the cheese.

  5. Pour the sauce into the prepared macaroni and transfer into the greased baking dish, sprinkle the rest of cheese on top and the chopped parsley, bake in a hot oven of 190°C for about 25 minutes or when it is golden brown on top.
