Ruvarashe’s Sticky Banana Pudding Recipe

The reason it’s one of my favourite desserts is because it is warm, gooey and very delicious - and comforting when it’s cold. This pudding is loved by my family, especially my sisters. I enjoy making it because it’s simple yet utterly amazing to eat.

Ruvarashe Matsika’s Sticky Banana Pudding

Serves 6

Ingredients:

  • 1 cup salted butter (250ml)

  • 2 mashed bananas

  • 1 cup caster sugar

  • 2 beaten eggs

  • 1 1/2 cups Champagne Valley Stoneground cake flour (375ml)

  • 1/2 tbsp baking powder (8ml)

  • 1/2 cups chopped walnuts

  • Extra bananas halved lengthways

Sauce:

  • 2/3 cup butter (160ml)

  • 1 1/2 cups sugar (375ml)

  • 1 cup (250ml) cream

Method:

  1. Preheat oven to 180°c . Grease a 1,5 litre ovenproof dish.

  2. Heat butter over high heat until foamy. Cool in a mixing bowl.

  3. Add mashed bananas, sugar and eggs. Whisk to combine.

  4. Sift in cake flour, baking powder, walnuts and fold through.

  5. Arrange the extra bananas on top of the batter, gently pressing in.

  6. Bake for 20-25 minutes until well browned.

Sauce:

  1. Heat butter in a large saucepan over a high heat.

  2. Add sugar and cream, bring to a boil.

  3. Reduce heat and simmer for 5-6 minutes until thickened, stirring frequently.

  4. Pour sauce over hot pudding and allow to soak in. Serve.
