Sydney Gwala's Banana Fritters Recipe

INGREDIENTS

  • 20g Sesame Seeds

  • 6 Bananas

  • 15g Butter +(15ml for frying fritters)

  • 30ml Sunfoil Oil +(30ml for frying fritters)

  • 1 Large Egg

  • 1 Cup Villa Doré Banana Flour

  • 50g White sugar

  • 40g Coconut (grated)

  • 1 Cup Milk

  • 20ml Baking powder

EXTRA

  • 20g White Sugar (for dusting)

  • 10g Cinnamon Powder (for dusting)

METHOD

  1. Preheat oven to 180 and roast the sesame seeds until light brown in colour and set aside

  2. Chop the bananas, preheat frying pan and add the butter and oil.

  3. Pan sear the bananas, mashed them and set aside.

  4. Beat the egg into the mashed bananas.

  5. Add the sesame seeds, sugar, coconut and combine well.

  6. Add the milk and form a batter

  7. Preheat frying pan, add the butter and Sunfoil oil.

  8. Add the baking powder and start frying immediately.

  9. You will be adding the oil as needed making sure not to make the fritters oily. Drop spoonful of the mixture in the pan making sure you do not overcrowd them. When cooked, place the fritters onto paper towelling.

  10. Mix together the sugar and cinnamon powder and dust the fritters in cinnamon sugar. Serve while hot.
