The recent launch of Baking with Jackie Cameron was a sell-out event hosted at Jackie Cameron School of Food & Wine in Hilton. It was a day of endless celebration with family and friends. All agreed, this book should be every cooking enthusiasts’ go-to reference for everything one needs to know about baking.

I owe thanks to readers of the various publications for which I have written articles. They have kept me on my toes and have inspired me to keep developing new home-style dishes. There’s an art to ‘getting it right’ and I’ve worked hard to ensure the recipes I share will leave you well satisfied and suitably motivated.
I’m convinced that better home cooking would boost the standards of food in restaurants. Patrons would be far more discerning – and demanding – thereby lifting the level of all we eat, generally.

My sister, Sheldeen, and I used to make this at least once a week when we were growing up.
This bacon, onion and cheese tart is always a favourite. I like to use a rich shortcrust pastry (pâté brisée) flavoured with cheese to give it an extra dimension.
