Riyaadh Jacobs Honey Chicken Salad

Riyaadh's Honey Chicken Salad

Ingredients:

1 ‘Midlands’ chicken breast

¼ cup of Champagne Valley stone ground white flour

50g of butter, salted

2 garlic cloves, minced

½ tbsp of apple cider vinegar

1 tbsp of Kikkoman soy sauce

⅓ cup of honey

1 punnet of Lettuce

½ a red onion, finely sliced

50g of feta cheese

1 punnet of cherry tomatoes

Method:

Cut the chicken breast into 2 pieces. Dust the chicken in the flour so that it creates a crust to allow the sauce to cling to it better. Add butter to the pan to sear the chicken breast while doing so add garlic, vinegar, soy sauce and then the honey. Simmer until sauce thickens and reduces, turn the chicken breast to coat in the sauce. Mix the finely sliced onions in with the lettuce, cherry tomatoes and feta cheese. Slice your chicken breast into thin slices then finally add to your salad mixture.
