It was many years ago that my grandmother made these scones for my grandfather, I remember that he would take them to work for lunch. This recipe means a lot to me because it’s my connection to my grandparents. My grandmother calls them the ‘famous scones to this man heart.’

Phumla Zakwe's SAVOURY SCONES Recipe

Serves 8

Ingredients 

  • 4 cups of Champaign  Valley  flour

  • 4 teaspoons of baking powder 

  • Pinch cayenne pepper 

  • 100g of chilled unsalted butter 

  • 150g of ham or bacon finely chopped 

  • 15ml of Sunfoil Platinum oil

  • 1/2 finely chopped onion

  • 1/2 yellow pepper 

  • 1/2 red pepper 

  • 2 cups (240g) of cheeses (cheddar) finely grated

  • Oryx salt and pepper for seasoning 

  • 1 1/2 cups of milk and extra to brush  

Method

  1. Preheat the oven to 180°C  grease and flour the baking tray.

  2. Sift flour and baking powder into a large bowl and cayenne pepper and rub the butter with your fingers until it resembles breadcrumbs.

  3. Stir in the ham or just heat pan and add  oil and onion together with your bacon fry until golden brown.

  4. Add your finely chopped peppers and 1/2cups of cheeses, season the mixture with salt and pepper. 

  5. Add milk cutting it into the dry mixture, mix well and do not over mix.

  6. Lightly roll out mixtures into 3cm cut into 8 wedges and place each wedge into prepared tray.

  7. Brush scones with the extra milk and sprinkle the remaining cheese. 

  8. Bake for 20-25 minutes or until and cooked.

  9. Serve warm. Spread extra butter
