Deeya Palath's Honey Cupcakes With Cream Cheese Frosting

Ingredients:

125ml full cream milk

10ml white vinegar

180g Champagne Valley cake flour

1 tsp baking pow

125g unsalted butter

150g white sugar

2 large ‘Midlands’ eggs

170g honey

5ml vanilla extract

Cream cheese

125g unsalted butter

56g gourmet Greek cream cheese

250g icing sugar

170g honey

Method:

Preheat oven to 180°C. Line a muffin pan with paper cups a set aside. In a small bowl mix together the milk and vinegar. Set aside to sour. In a medium bowl mix together the flour, baking powder and salt. Set aside. Cream together butter and sugar until light and fluffy. Add in eggs one at a time mixing after each addition. Mix in the honey, vanilla and soured milk

Slowly mix in the dry ingredients to the wet ingredients, mixing until just combined. Scoop the batter into the prepared muffin pan, filling until about ¾ full. Bake in preheated oven for about 18-20 minutes or until a toothpick comes out clean when inserted. Allow the cupcakes to cool in the pan for 5 minutes before transferring to a wire rack to cool completely. Cream together the butter and cream cheese. Mix in the icing sugar and honey. Pipe the frosting onto the cooled cupcakes.
