Brynn Enslin - Student Endorsement

I am grateful to have been a part of the Jackie Cameron School of Food & Wine 2016/17 student intake - and began the 18-month course knowing only that my mission was to become a chef. Now after recently graduating, I can share with confidence that I am well equipped to make my mark in the industry.

I owe this achievement to my mentor Jackie Cameron. She pushed me throughout the program and ensured that I had a full understanding of all that took place in the kitchen, as well as in the classroom.

The course modules were thoughtfully structured - the focus ensuring all bases were covered before graduates entered the industry. From the WSET Level 2 Award in wines and spirits, to cake decorating with legendary Pam Alty; and from a week of artisanal bread baking with The Wild Bread Co, to expanding our cultural knowledge and culinary diversity with Parlez-vous Cuisine; we were taught how to work the proper way. This meant doors opened – and success became imminent.

Cuisine is an exciting yet scary industry. The culinary community is still reasonably small, so we all know one another and, because we have studied at JCSF&W, we know we will be watched. The industry needs more students and Jackie Cameron’s course comes highly recommended. Jackie will be right by your side, supporting you every step of the way.
